Finnish Blueberry Pie (Mustikkapiirakka)

This Finnish Blueberry Pie (Mustikkapiirakka) recipe is based on the Finnish recipe known as Mustikkapiirakka Ricetta. It is definitely one of the easiest ways to make a Blueberry Pie / Crumble. In Finnish, Mustikka means blueberry and Piirakka means pie.

I was definitely craving something sweet and blueberries were on my mind. We only had frozen blueberries. For the pie crust I wanted to use up a Pillsbury Flaky Rolls tube that I had bought at Christmas and not used yet. The Pillsbury option gave it a bit of a bread/cakey taste that is closer to the Finnish style I was going for. You can use whatever pie crust you prefer.

Ingredients for Finnish Blueberry Pie:​

Caution: Please check the ingredients for any allergies / food sensitivities, before trying this recipe.

1 Pie Crust​ – of your choosing, homemade or cheater pie crust 🙂

Filling:​

3 cups fresh/frozen blueberries​

½ cup white sugar​

3 T flour​

1 tsp cinnamon​

1 T lemon or lime juice​

Topping:​

½ cup flour​

½ cup brown sugar​

2 T butter (cold)​

Instructions for Mustikkapiirakka – Finnish Blueberry Pie:​

Place Pie Crust in pie plate or spread Pillsbury Flaky Rolls into pie dish. I used the Pillsbury Flaky Rolls and placed the round roll discs into the pie dish, then using my fingers spread them out and joined the edges together to make a pie crust. It wasn’t too difficult. I tried to form the top edge and shape/crimp it a bit. Not perfect but okay!

Combine Filling ingredients in a bowl, if frozen blueberries it will be dry. Spread out into pie crust to distribute evenly​.

For topping, combine flour, sugar and butter in a separate bowl and cut in butter, then using fingers, break up into crumbs further until crumbly and pea size​.

Spread topping over filling evenly as shown in picture below.

Bake at 375 degrees for 45-50 minutes. Let cool.​ This was the first time I made this recipe and the crust was probably a bit overdone… maybe I could have taken it out at 45 minutes. It still tasted great though!
