French Beef Bourguignon

This is another one of my old recipes that I was first introduced to in Ottawa in 1989. I was hooked on this authentic French Beef Bourguignon recipe! You will need your slow cooker for this classic recipe. OMG, the red wine flavour and aroma are just amazing.

Keto Beef Bourguignon Option

If you are following a Keto Option, instead of serving this meal with rice, you can serve it with steamed cauliflower. Also, you can leave out the carrots, or you could add a sweet potato instead.

Ingredients

Please check ingredients for any allergies or food sensitivities before trying this recipe.

1 kg Stewing Beef, cut in chunks

4 strips Bacon

2 cloves Garlic crushed

4 T Butter

Salt and pepper

4 Carrots chopped

8 mushrooms peeled

8 baby onions (optional)

Bouquet Garni – 2 stalks celery, 2 sprigs Thyme

and 4 sprigs Parsley, 1 Bay Leaf (tied)

1 ½ T Flour

2 T Tomato Paste

1 Bottle Red Wine (Burgundy style or other medium dry wine)

Instructions

Prepare the vegetables and other ingredients. For the mushrooms, I always peel mine instead of washing them. Since you remove all the surface area, you remove any dirt that might have been on them. I find they taste much better when peeled instead of washed.

Melt butter in large pot, add Onions (optional), Bacon (sliced in sections about 1 inch long or so), Garlic (crushed).

I did not add onions in mine as my hubby has a sensitivity to onions. I like the natural bacon from Greenfields, without the preservatives. The flavour is great. If you don’t happen to have bacon, you could substitute with ham.

Cook over medium heat till just starting to brown.

Salt and Pepper Meat, add to Pot, brown on all sides, lower heat add carrots, bouquet garni, cover and simmer 15 min.

Classic French Beef Bourguignon includes a traditional bouquet garni. To make the bouquet garni, you can use fresh herbs and tie them all together as in the picture below. If you don’t have fresh, substitute for dry herbs. The flavour will be similar. I decided not to tie the celery in, but chop it up as it is part of the meal. You will cook everything with the bouquet garni in the pot and then in the slow cooker. Then take out and dispose before serving.

Transfer all but sauce to slow cooker with slotted spoon.

Stir in Flour, tomato paste, add the red wine little by little, stirring constantly. The original recipe calls for a burgundy style red wine. I like to use a dry red wine, such as a sauvignon blanc. This time I used a Malbec, and it was so good! And yes, you use the whole bottle 🙂

Add garlic, bring to boil and transfer to Slow Cooker, adding mushrooms

Cook on High, covered for 6-8 hours. The aroma in your house will be amazing!

Don’t forget to dispose of the bouquet garni!

At the very end, if the sauce is still not thick enough, you can thicken by creating a paste with 1-2 T of flour and some of the sauce from the slow cooker. Stir with a fork until its a smooth paste, and after removing everything but the sauce into a serving dish, whisk the paste into the sauce to thicken.

Pour the thickened sauce into the serving dish and serve with rice or potatoes, or cauliflower (for Keto Option).
