This is another favorite recipe for a quick and easy cabbage and carrot coleslaw aka my Country Coleslaw. You can serve this side dish up right away to complement any meal. It also serves as the base coleslaw recipe for any variation you would like to make depending on what you like to add. This is a traditional coleslaw recipe and is so similar to what I was used to eating growing up on a farm. I think it’s one of the best cabbage coleslaw recipes, since it is so easy and quick to make.
Keto Coleslaw Option
It is easy to modify for keto by leaving out the carrots and just including cabbage (green and red), nuts and seeds and your favorite mayo. As an alternative you can added red peppers or radishes.
The best part about this recipe is its crunchy flavor and all natural ingredients. You can easily modify this recipe by adding your favorite nuts, seeds and raisins. For a special twist, add some dried cranberry.
This recipe forms the base for any type of coleslaw you are craving!
I often use a trail mix and just grab a handful to add to my coleslaw. It’s so fast to make and always turns out well! (I have to admit in the picture above I didn’t have any red cabbage and it still turned out well!)
Ingredients:
Caution: Please check the ingredients for any allergies / food sensitivities, before trying this recipe.
1 cup green cabbage chopped
1/2 cup red cabbage chopped
1 carrot grated (optional)
½ cup mayonnaise
1 T vinegar
1 tsp dijon mustard
1 tsp sugar (substitute 5 drops stevia liquid or 1/2 packet of stevia powder)
2 tsp celery seed
3-4 T assorted nuts, seeds and raisins (optional)
Instructions:
Chop approximately 1/3 to 1/2 of head of green cabbage to get 1 cup of green cabbage
Chop approximately ¼ head of red cabbage to get 1/2 cup of red cabbage.
Grate carrot and combine with cabbage
Combine mayonnaise, vinegar, mustard, sugar and stir into cabbage/carrot mixture.
Add celery seed and stir.
Divide quantity needed and cover/chill remaining. Will last 2-3 days in refrigerator
Before serving, add optional add nuts, seeds and/or raisins
Serve and enjoy!
