Here’s a quick and easy Crock Pot Teriyaki Chicken recipe for those busy days when you just don’t have time to spend in the kitchen. You can throw the ingredients together in the slow cooker and come back when it’s done. Yes, even the chicken! The flavor is tangy and savory, just like sweet and sour chicken.
My husband I are in the middle of moving, renovating, packing, cleaning, to move to our new ‘retirement-sized’ house and we needed something quick and healthy that would serve up for more than one day.
I have made this recipe many times, usually for larger groups in a turkey-sized casserole dish. I usually double the recipe and make about 20 teriyaki chicken legs. That works great for large buffet dinners.
This time, I threw the same ingredients, but with chicken thighs, in the crock pot, and let it cook. We left the house at 10 am and came back at 6 and it was done. It smelled and tasted great! Husband approved! His comment “Why don’t we have this all the time?”
Ingredients:
Caution: Please check the ingredients for any allergies / food sensitivities, before trying this recipe.
8 Chicken Thighs or 12 Legs, Bone in or Boneless
Sauce:
1 ½ cups water
¼ tsp salt
1/8 tsp pepper
1 cup brown sugar
1/8 cup white vinegar
4 T Soy Sauce
3 T Teriyaki Sauce (or use extra 2 T Soy Sauce)
1 T Ketchup
1 T flour
Instructions:
Place Chicken pieces directly into Crock Pot.
In a bowl or large measuring cup, combine the sauce ingredients.
Whisk in the flour at the end.
Pour sauce mixture into Crock Pot and cook on high heat for 7 hours. Rotate pieces half way through. Turn to low for last 1-2 hours.
Remove cooked chicken pieces from Crock Pot and place into serving dish.
Using a stainless steel pan, pour the sauce into the pan and heat on high. Whisk in a paste made of 1 T flour with 2 T water. Whisk constantly until the sauce thickens more and is bubbly. Don’t let burn.
Serve sauce over top of chicken and with rice and your choice of vegetables.
