Here is my very simple recipe for Cashew Chicken Lettuce Wraps which is a favorite Thai chicken lettuce wraps recipe. The hoisin sauce is one of my all time favorite sauces for any dish and this recipe is addicting. This is a Keto – friendly meal (without the chow mein noodles) which you will enjoy with your family again and again. Alternatively you can serve with rice, if desired. If you have a peanut allergy you can easily leave out the cashews and please check other sauces for their ingredients.
I have included the quick recipe for my spicy Sriracha drizzling sauce to serve this with.
Vegan option:
Another alternative would be to use Prawns for this recipe instead of chicken 🙂
Ingredients

4 Chicken thighs cut in chunks
1 clove Garlic crushed
1 T Olive oil
1 T Sesame oil
4 – 5 Mushrooms sliced (optional)
Sauce: 2 T hoisin sauce, 2 T soy sauce, 1 T brown sugar
1 cup finely chopped carrots
1 cup chopped peppers
1 cup cashews (optional)
1 1/2 cup dry chow mein noodles (optional)
4-5 Romaine Lettuce Leaves per person
Sauce for drizzling:
Ratio: 1 T sour cream, 1 tsp sriracha sauce
Instructions
Cook chicken thighs, garlic, mushrooms (optional), in 1 T olive oil and 1 T sesame oil.
Once meat is cooked, add sauce made with ratio of 2 T hoisin sauce 2 T soya sauce and 1 T brown sugar.
Double or triple sauce depending on amount of chicken.
Add vegetables and stir fry for 5 minutes.
At end add 1 cup cashews and 1 1/2 cups chow mein noodles (optional), stir to quickly to moisten.
Serve with lettuce leaves for wraps or over rice. Drizzle or spoon over the Sriracha drizzling sauce. (Careful, the sauce is spicy). You could add honey if you like the sauce a little sweeter. These Thai chicken lettuce wraps look so yummy!
