Well, it has taken a few years, but I think I finally have the best Creamy Caesar Salad recipe with slight modifications of course! It’s surprising how many recipes end up not being creamy after all. The secret all along is the Mayonnaise! I would have to say that the taste is so similar to that served in a restaurant, you will be surprised. Here is my version of this Creamy Caesar Salad Dressing recipe, so easy to make and yes, so creamy.

Keto and other Options
For the Keto option, be sure to use low carb bread, such as Rye Bread or Almond Bread to make the croutons.
How to Dress up a Caesar Salad
To make my Caesar Salad a bit more unique than using the bacon bits or bagged shredded cheese, I also like to use Reggiano Parmesan Cheese and a good Natural Bacon without any preservatives. The taste is so much better! To jazz it up even more, I like to add Capers, but these are totally optional! If you want to go even farther, add sliced hard-boiled eggs on top. Sometimes I serve my Caesar salad with small cubes of carrot, which gives it a bit more crunch. The options are endless.
Ingredients for 4 servings:
Warning: Please check ingredients for any food sensitivities and food allergies, e.g. Anchovy paste contains seafood.
2 Heads Romaine Lettuce (e.g. bag of 3 Romaine Hearts, use 2 if you need for servings, 1 for 2 servings)
1 medium crushed garlic clove
½ tsp anchovy paste
1 T lemon juice
½ tsp Dijon mustard
¾ tsp Worcestershire sauce
½ cup Mayonnaise
¼ cup Reggiano parmesan
1/8 tsp salt
1/8 tsp black pepper
1 slice bacon (optional)
1 T of capers (optional)
2 slices of Rye bread, cubed
1 T Olive oil
1 T Butter
Combine crushed garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce in a large bowl, whisk.
Add Mayonnaise and whisk until smooth.
Stir in 2/3 of grated Parmesan, salt & pepper
Makes about 4 T of dressing.
Serve with Romaine Lettuce, cut/broken into small pieces, and mix with spoons. Below is one head/heart of Romaine, which was plenty for hubby and me, so I saved the other half of the dressing for a future meal 🙂
Alternatively, you could try to drizzle over whole heart of Romaine Lettuce (roasted or fresh) whichever style suits you. It’s a bit thick so to drizzle you will need to let it fall off the spoon in a bit of a clump, lol.
Garnish with bacon, capers and bought or homemade croutons and remaining Parmesan cheese.
I like to cook my Greenfield Naturals bacon, as I have been trying to cut out the nitrites in my diet as much as possible, so this is a good alternative.
I cook the bacon in the microwave for 1.5 minutes on a microwave tray, such as the Nordicware Microwave Bacon Cooker below…no grease and tastes great! I usually cut the piece up in small bits.

Refrigerate unused dressing for up to 3 or 4 days.
For Homemade Croutons:
Fry bread cubes with butter and olive oil in pan until brown.
Blot on paper towel and serve with salad. (This picture is from a previous time I made the croutons. So lovely with rye bread).
The final result, creamy, with a zing!
