Finnish Cabbage Casserole – Keto-Friendly

This Finnish Cabbage Casserole (keto-friendly) is super quick to make and throw in the oven. If you would like rice for the rest of your family, then you can cook and serve that on the side. Or you can combine cooked rice into the dish, if you aren’t doing keto.

My mom used to call this Lazy Man’s Cabbage Rolls. Only recently, I realized that it was likely a Finnish recipe that had been passed down.

Of course, I modified this Finnish Cabbage Casserole recipe to make it Keto-friendly. That’s what I love about recipes, you can try different things and see what works best for you.

I left out the onions and added Italian seasoning to give it a bit more flavor. If you want a bit more variety, add more vegetables, such as sliced carrots (not Keto), cauliflower, mushrooms, zucchini or peppers. You can even add a bit of bacon or ham for more flavor.

Ingredients:​

Caution: Please check the ingredients for any allergies / food sensitivities, before trying this recipe.

½ cup uncooked rice (ignore for keto version)​

2-3 T butter, olive oil or  coconut oil​

1 lb extra lean ground beef​

1 tsp salt​

1 T italian seasoning​

1 head green cabbage​

1 celery stalk​

1 T brown sugar​

Dash pepper​

1 ½ cups beef or veg. broth

Instructions:​

Cook rice – Ignore, if Keto​.

Brown ground beef in frying pan with olive oil or coconut oil​. I prefer using extra lean ground beef to avoid all the extra grease/fat. You could add some bacon slices or ham to the pan and brown that as well for extra flavor.

Cut up cabbage and celery and in a separate pan, fry to cook partially.  ​ I usually don’t overcook the vegetables as they will have plenty of time to soften in the casserole dish later.

Add additional vegetables to your liking, e.g. carrots (not Keto), cauliflower, mushrooms, zucchini or peppers.

Add spices, brown sugar and broth, combine with browned ground beef​.

Then transfer to a buttered casserole dish​.

Optional: For more flavor add other vegetables of your choice, e.g. carrots, peppers, parsnips, or add ham or bacon.

Bake at 400 degrees for 45-50 minutes until brown. Cover last 10 minutes if needed.​

Serve and Enjoy!​
