Here is my super Easy Baked Chicken Parmesan recipe that I made by using the most readily available ingredients. I am calling it ‘Hacked’ because it is so quick and easy to make so that you can focus on other more important things in life 🙂 My son loves it so much, when he moved out he asked for the recipe! Here is the recipe for Easy Baked Chicken Parmesan!

3 Chicken Breasts or 6 Chicken Thighs
1 16 oz Jar of Pasta Sauce
1 ½ T of Italian Seasoning
¾ tsp Garlic Powder
12 Heaping T of Panko Crumbs (2 T per chicken piece) – (For a Keto version, leave these out or substitute with suggestions below)
6 T of Grated Tex Mex Cheese or Mozzarella
6 T of Grated Parmesan
Here are the brands I used this time. You can modify this easily for your favorite brands or what is available at your local store.
Keto options for substituting panko bread crumbs.
Some people choose to make their own keto bread crumbs. I would suggest using crushed nuts if you want the crunchy flavor. Crushed almonds or walnuts would work well. If you don’t want to use nuts, then you could add some precooked bacon and crumble it. This would also give an awesome flavor.
To make this easy Chicken Parmesan, if using Chicken Breasts cut each piece into half, so you have 6 equal sized pieces. Spread chicken pieces out in pan.
Open Jar of your favorite Tomato Pasta Sauce. I love the Classico sauce because it comes in different flavors. I actually used the Spicy Red Pepper one, but showed the Red Wine and Herb. We have used the Florentine sauce before, all work well.
Stir in 1 ½ T of Italian Seasoning (yes, into Jar) – this is so easy, no messing up more dishes.
Using a spoon, pour Italian Seasoning in between Chicken pieces and underneath, not too much on top.
Spoon 1 Large T of Grated Tex Mex /Mozzarella Cheese on each piece. Any cheese will do. You could use Monterey Jack if you have that. Use whatever you have on hand.
Combine Panko Crumbs and Garlic Powder in a bowl, spoon 2 T on top of each chicken piece (flatten top slightly).
Spoon 1 Large T of Grated Parmesan Cheese on top of each piece.
Here is what it will look like after layering the Sauce with Chicken, the Tex Mex/Mozzarella Cheese, the Panko mixture, and then the Parmesan Cheese on top:
Bake at 375 Degrees for 1 hour (uncovered). My chicken pieces were slightly frozen and it was still done. Check at 45 minutes and if brown and bubbly it might be done if you used thawed chicken.
Serve this easy Chicken Parmesan with Pasta/Vegetables as desired.
