If you want to know how to make Tortillas, here is a super easy recipe for fresh Homemade Mexican Flour Tortillas. You can whip these up and serve them fresh for your family. Double the recipe, as needed. Make ahead and reheat if needed for 10 seconds in the microwave. Serve with grilled chicken and peppers, grilled fish or just grilled vegetables, guacamole and fresh lettuce, cilantro or other fixings. So good! I have included my Chipotle spread for the base in the recipe instructions below.

Ingredients
Please check for any food allergies or sensitivities before trying this recipe.
For 2 servings, 6 small or 4 medium sized tortillas:
1 cup all purpose flour
½ tsp baking powder
½ tsp salt
1 T Olive Oil
½ cup warm water
For Chipotle Spread (Combine)
1 T sour cream
1 T Mayonnaise
½ tsp chipotle powder
¼ tsp Tex Mex spice or other blend (optional)
Instructions:
To make these homemade flour tortillas, mix together flour, baking powder, salt and oil in a bowl. Slowly add warm water stir with fork adding slightly more water if needed to form a ball.
Knead dough in hands for 5 mins. Cover let stand for 30 minutes.
Divide ball into 6 for small tortillas or 4 for medium.
Roll out on floured board to very thin tortilla, 1/8 to 1/4 inch thick.
Heat pan to medium heat and add ½ tsp olive oil.
Cook these homemade flour tortillas approx. 2 minutes per side, flip when starting to brown and puffing up. Flatten with flipper, flip again as needed til very slightly browned.
Serve these easy Mexican flour tortillas with Chipotle spread, chicken or fish, lettuce, guacamole, tomato, cilantro or other favorite fillings!
In the picture below I grilled 4 chicken thighs in 2 T olive oil, with 1 tsp Tex Mex spice. I kept frying the chicken until it was carmelized (low to medium heat), so that it tastes the best. Add sliced peppers half way through. Once cooked, cover until ready to serve.
