Here’s a simple recipe for Spaghetti Bolognese with Sun dried Tomatoes. It will please everyone in your crew including the little ones. I have made a basic tomato meat sauce and added sun dried tomatoes and a bit of brown sugar to take off the edge. The result is a smokey savory flavor that is very satisfying.
Vegan and Keto Options included below.
Ingredients for Bolognese with Sun Dried Tomatoes:
Caution: Please check the ingredients for any food sensitivities or allergies.
300g of Spaghetti or other pasta noodles (roughly 4 servings)
2 T Grated Parmesan Cheese for Topping
Sauce:
1 lb Extra Lean Ground Beef
1 T Olive Oil
14 oz Tomato Sauce
1/2 Cup Water
1 1/2 T Italian Seasoning
2 Garlic Cloves Crushed or ½ tsp Garlic Powder
1 ½ – 2 T chopped Sun-dried Tomatoes (3 T for bolder flavor)
½ T Brown Sugar
2 Small chopped Peppers (1 Red, 1 Yellow)
1 Celery Stalk diced
Here is the Sundried Tomato I used. Anything similar will work well with this recipe.
Instructions for this Sun Dried Tomato Bolognese:
(Serves 4, Double recipe for as needed)
Brown Ground Beef in a frying pan with 1 T of olive oil. Stir until crumbly and cooked. Drain Beef, if needed.
In separate Saucepan, add Tomato Sauce, Water, Spices and Garlic, Peppers, Celery, Sun-dried Tomatoes, Brown Sugar. (As I mentioned above, add 3 T for bolder flavor).
Let Sauce come to boil then turn down to simmer and cover for 20 minutes.
Transfer Ground Beef to Saucepan.
In Separate Large Pot, boil water for Pasta. Cook Pasta as directed.
Drain Pasta and Rinse with Cold water.
Serve this Sun Dried Tomato Bolognese Sauce over Pasta with Grated Parmesan Cheese on top (optional).

Vegan option:
If you are Vegan, then instead of Ground Beef, use Button Mushrooms and/or Zucchini cubed.
Keto option:
For Keto Diet followers, serve over boiled cauliflower or boiled cabbage instead of spaghetti.
